Biography 

Elizabeth Yakes Jimenez, PhD, RD is an assistant professor of nutrition and family and community medicine. Her research is focused on: 1) preventing and improving the treatment/management of obesity and diabetes in New Mexico, particularly among underserved populations, children, and emerging adults, via public health and school-based interventions and policy change; and 2) preventing micronutrient malnutrition in women and young children through fortification and food-based approaches in global settings.
